Casa Real de Iloilo: The Tale of a Heritage Provincial Capitol

This paper traces the 150-year history of the Casa Real de Iloilo, the country’s oldest and grandest provincial capitol building. Completed in 1873 during the sugar boom, it was praised in Madrid as “the most commodious and largest in the Philippines.” It served as the office for 18 Spanish and 29 Filipino governors.

This study highlights the cultural heritage of pancit in Luzon, documenting 101 regional varieties. Using heritage mapping, it shows how pancit reflects local identity through ingredients, cooking practices, and community traditions shaped by regionalism and indigenization.
